Coconut Dark Chocolate Chip Muffins {Recipe}

We love muffins at our house. And we love making new muffin recipes. Some of our favorite muffins have come from experimentation.
 

Teeny wants to be a cook when she grows up- and have a cooking show, just like Rachael Ray. {grin} It didn't surprise me when she told me that she had created a recipe. What did surprise me was how utterly delicious it was!

Her recipe was for coconut muffins. She made her own variation of our basic muffin recipe, which is really simple to add ingredients to make your own variety of muffins. We baked them up together, and everyone in the house gave them a thumbs up. For our second batch, I suggested we add dark chocolate chips. She agreed enthusiastically!

This recipe can be used to make Coconut Muffins or Coconut Dark Chocolate Chip Muffins. Simple add or omit the chocolate chips.

 

Coconut Dark Chocolate Chip Muffins

 

2 cups flour
2/3 cup sugar
1 Tbsp. baking powder
1 tsp. salt
1/2 cup sweetened coconut flakes + a little to sprinkle on top of muffins
1 egg
1/3 cup vegetable or canola oil
1 cup milk

 

Preheat oven to 400 degrees Fahrenheit.
 

In a large mixing bowl, mix flour, sugar, salt, and baking powder. Mix well, then add coconut and dark chocolate chips. Mix well.
 

In a small mixing bowl, beat egg well. Add oil and milk and beat well. Add these wet ingredients to the dry mixture. Stir just until mixed. Do not over mix.
 

Spoon batter into greased muffin tin. Fill each cup about 2/3 full. Sprinkle a little coconut onto the top of each cup of muffin batter.
 

Bake for 16-20 minutes, until muffins are slightly golden brown on top. This will make 12 muffins.

  1. The recipe was easy to follow. I put 1 cup of white flour and 1 cup of Spelt. I’m trying to cut down on white flour. They were great!
